Sometimes making lunches on the weekend for the coming week is the most time efficient (and fun—get the kids to help!) way to make sure everyone gets a tasty, healthy lunch when mornings get crazy. Make the recipes that freeze well, such as the Whole Wheat Mini Calzones, Tuna Rolls, Cheese and Bacon Pockets, and Pizza Rolls, in large batches so you can take them out and thaw them the night before you need them. Wrap each cooled item separately in plastic wrap, and store in a labeled freezer container. Some of these make-ahead dishes refrigerate well for three or four days at a time, such as the Yogurt Parfait and the Bean Dip. Store in tightly covered, plastic containers in the refrigerator. If you store a variety of make-ahead lunches, your kids can choose their lunch in the morning, upping the chance they will actually eat it!
