About the Author


Lara Rondinelli-Hamilton, RD, LDN, CDE, is owner of Rondinelli Nutrition Consulting, LLC, and has over 13 years of experience counseling people with diabetes, high-cholesterol, high blood pressure, as well as those looking for advice on weight loss and general wellness. She is a regular columnist for the diabetes website dLife.com and has been a speaker to numerous organizations and groups for healthy eating, cooking, and meal planning. Lara also has a special interest in counseling people with Celiac Disease as she was biopsy diagnosed with Celiac Disease in 2007.

Before starting her own firm, Lara previously worked at Rush University Medical Center in Chicago, as the Diabetes Center Coordinator, and started their American Diabetes Association Education Recognition Program. She has been actively involved with the American Diabetes Association, diabetes camps, serving on the camp committee and working as lead dietitian for the Triangle D camp in Illinois. She is an active member of the American Association of Diabetes Educators and has served on the board of the Chicago Dietetic Association and the University of Chicago Celiac Disease Center. Lara lives in the Chicago suburbs with her husband and son.

Jennifer Bucko Lamplough, MBA, is the Dean for Integrated Learning for Robert Morris University’s ICenter. Jennifer’s past work experiences include Associate Dean and Chef Instructor for the Robert Morris University Institute of Culinary Arts; Executive Chef of the MarketPlace Food Store; and Web Communications Specialist for National Futures Association in Chicago.

Jennifer has a Certificate in Professional Cooking from the Cooking and Hospitality Institute of Chicago, a Le Cordon Bleu certified program, a Bachelor of Arts Degree in Journalism from Indiana University in Bloomington, Indiana, and a Masters of Business Administration degree from the Morris Graduate School of Management in Chicago, Illinois. She is a member of the prestigious Les Dames d’Escoffier Chicago Chapter, for which she sits on the 2010-2012 Executive Board as Secretary and was co-chair of the 2010 Les Dames Fundraiser. She is also a Master Certified Foodservice Executive (MCFE) through the International Foodservice Executives Association (IFSEA). In her culinary role, Jennifer has appeared as a guest chef on several television programs including WLS Channel 7 news, WGN Channel 9 news, NBC 5 Chicago news, and Total Living with Jerry Rose on the Total Living Network. She has also been a featured chef on several radio programs across the country, most notably the Living Today program on Martha Stewart Living Radio. She has done cooking demonstrations across the United States including the Taste of Chicago, the American Diabetes Association Expo, the International Association of Culinary Professionals Annual Conference, the Midwest Literary Festival, and the Chicago Flower Garden Show.
