    I highly recommend "Vegan Bite By Bite" to anyone struggling with the transition to a vegan or vegetarian diet. It is also an excellent resource for those who have already made the switch and are looking for delicious new cooking ideas or a quick answer to the age old question, "What's for dinner tonight?" As a practicing vegan, Ms. Peterson's book has been a blessing! It is my go-to reference for new recipes and ideas, shopping sources, and cooking techniques.

    I have read the book and prepared a lot of the recipes, and I must say they taste amazing! I highly, highly recommend this book for the carnivore, vegetarian or even the vegan who wants to live a healthier life.Many of the recipes have therapeutic tips about the medicinal value of the foods. Being a younger person, I will soon be out on my own and I will now have some practical tips and recipes that I can prepare for myself to stay healthy on a vegan diet. I'm going to tell my friends about this

    Marilyn's book had special meaning for me. As an R.N., I see so much suffering in the hospitals with patients that have so many preventable conditions. There is scientific documentation that plant-based nutrition can prevent, and may even reverse many of these conditions. The documentary/movie " Forks Over Knives" is one example of the scientific documentation in support of a plant-based diet.

    This is a fabulous book. I am a holistic MD and I am always looking for ways to educate and inspire my patients. There are lots of choices out there when it comes to reading about the vegan diet. But there is none that is so comprehensive or so much fun to read. This book includes scientific information from researchers and doctors. Great recipes. Personal stories from lots of interesting vegans and several doctors. The author's personal story, which will delight and inspire you.

    I loved reading the simple, detailed and clear approach for change that Vegan Bite By Bite gave to me. This book encouraged and inspired me to start becoming vegan. Some of my favorite dishes that I've tried so far are: Hot & Cold Slaw, Tempeh Tuna, Pimento Cream Cheese and Cream of Spinach Soup. They were all easy to prepare and deliciously tasty. With full confidence, I'm planning on using this terrific menu guide and cookbook the next time I have company.
