Known for attention to detail and perfection of recipes, the Test Kitchen staff demonstrates how each recipe is tested at least two dozen times in order to perfect the technique and ingredients. Included are basic, traditional recipes, but many introduce new time-saving techniques. Also featured are variations on recipes, such as a classic chicken noodle soup with slow cooker and pressure cooker versions. Chapters are divided into the different meats, as well as soups, salads, breads and desserts. Chapters on Italian, French, Tex-Mex, diner favorites, takeout, and Thanksgiving classics are a welcome addition. A lengthy list of favorite equipment and ingredients covers just about anything a home cook could ever wish for.
